I've emailed the person with the Rumpelstiltskin booklet to request a scanned copy, where possible I would like to record some of these songs and make them publicly available on Youtube.

The BBC have destroyed both books and recordings so making new ones for non commercial purposes is within the Fair Use regulation of copyright

I am a Music Teacher and I am on the look out for Singing Together recordings from late1980's/early 1990's with pamphlets to go with these if possible.

I can see that [e-mail] is selling these items on ebay. From what he says above about wanting them as a resource if schools, or if individuals would like to borrow any or as a physical record of them does not seem indicate putting them up for sale on ebay. Hopefully schools, or those who helped out got something out of it as well.
