Soak it in cold water overnight to remove some of the saltiness. I make my own dry cure bacon and that gets pretty salty, so I have to do the soak thing for about 3 days changing the water each day, but it works. You've got to weigh your beef down if you do it yourself, so's a corner doesn't surface without permission. Giok
